How we use Herbs everyday

This week we hosted our Jekka's How to Grow Master class where participants learnt how we sow seeds and take cuttings using organic techniques and peat-free compost.

All our master classes are accompanied by a delicious, homemade, herb-filled lunch. As a family, we cherish incorporating herbs into our meals, just like our grandmother and great grandmother before us. Herbs elevate even the simplest ingredients, turning an ordinary dish into a culinary celebration!

    During this master class you will explore the culinary and medicinal use of herbs. and learn about the different tastes, how to prepare simple dishes and how to preserve them for future use.

     

     





    Jekka's Herb Based Recipes

    To spark your creativity in the kitchen, below are some delightful herb combinations we recommend trying. If you feel inspired, check out more herb-based recipes on our website.


     

    Carrot & Coriander salad

    These two ingredients go so well together because they are first cousins and both from the Apiaceae family.

    Scatter chopped coriander leaves over grated carrot with a drizzle of olive oil and a dash of lemon juice. Leave for a couple of hours, in the fridge, before serving and the flavours will infuse.

    Mint Salad Dressing drizzled over a green salad.

    A handful of spearmint leaves, ideally Moroccan or Tashkent mint, one spoon of balsamic vinegar to three spoons of a light olive oil, whizz up together with a hand blender and drizzle over your lettuce. You will never need to buy salad dressing again and it will keep in the fridge for 2 days.

    Fruit salad with chopped Mint

    Instead of sugar add a handful of chopped mint over your fruit and you will be amazed with how the mint reduces the acidity. Add a spoon of crème fraiche and you have a wonderful summer desert.
